MORTADELLA
HISTORY:

Mortadella, the most famous sausage in the culinary tradition of Bologna, can be easily traced to the 16th century. Some historians have found mortadella documented as far back as 1233!

The name “mortadella” is thought to derive from the word “mortaio” (which is Italian for “mortar”) because the mixture was produced by pounding it with a mortar and pestle. Monks in Bologna would grind their meat till it achieved a fine consistency. It could then be stuffed into a casing and cooked to make sausage.

At the end of 1600 mortadella had become a highly requested commodity used for exchanging goods.
While the people of Bologna traded a great deal in silk, velvet, and linen, it was their mortadella which became best known throughout of Europe.

Since 1899 the English and Americans called any type of pork sausage or salted pork meat produced in Bologna, “bologna” or “bologne/baloney”.


N.B. “Mortadella” does not directly translate into English – ie. “dead donkey”. While other types of meat can and may have been used to make mortadella in the past, it is now most commonly produced with pork and/or beef alone. Bona Foods uses only Federally Approved pork in all of its sausage products.

Mortadella is essentially the Italian ‘grandfather’ of conventional bologne.
Bona Mortadella is usually eaten cold and sliced paper-thin to enjoy its smooth and mild flavour.

Extrafina
Bona Mortadella Extrafina (or Extra-Fine Mortadella) is a smooth and delicious oven-baked product consisting of finely ground pork and small cubes of pork fat. It is seasoned to perfection with aromatic flavours and spices. Accordingly, Extrafina is our most popular and highest selling mortadella product.

Bona Mortadella Extrafina is cylindrical in shape and is uniformly pink except for its small, evenly distributed areas of pearly-white fat. Given the large size of this product, Extrafina is usually used at deli counters, or wherever large diameter slices are needed.
Bona offers Mortadella Extrafina in whole or half pieces. All pieces are vacuum packaged to ensure freshness.

Media

Mortadella Media is a medium (¼) size version of the Extrafina. It consists of the same meat mixture but is stuffed into a smaller casing. Weighing about 1½ kg, a Media is versatile enough to be used in restaurants or in homes on smaller slicers – wherever a medium size slice is required.
All pieces are vacuum packaged to ensure freshness.

Baby

·Made from the same meat mixture as Extrafina, a Bona Mortadella Baby is (as the name suggests) a baby-sized version of an Extrafina. Weighing about ½ kg, this is our smallest mortadella product and is intended for self-serve sales in retail stores and home slicing. Consumers purchasing Mortadella Babies can slice them at home as needed and enjoy fresh slices of mortadella at any time.

Italiana (a.k.a. “The Big One”)

Weighing in at about 9 kg (20 lbs) per piece, Mortadella Italiana is the largest product that Bona produces. With a diameter of about 8” for extra large slices, a commercial grade slicer is usually required to slice this product with ease. Having the same taste and Mortadella Italiana is typically utilized at deli counters or in high volume applications.

Hot


Bona Mortadella Hot is the spicy cousin of the Extrafina. Instead of using black pepper, red cayenne pepper is substituted to give this mortadella some bite.

Lean

Bona Mortadella Lean is intended for those consumers who are mindful of the fat-content of their food. Cubes of extra lean meat are substituted for cubes of pork fat in this meat mixture. So, rather than pearly-white spots, portions of lean meat are instead visible as dark pink areas. Offering a superb taste, Bona Mortadella Lean contains approximately 45% less fat than our Extrafina line. For those who enjoy the taste of traditional mortadella but want to minimize their fat intake, this product is definitely for you.
Bona offers Mortadella Lean in whole or half pieces. At special request, Mortadella Lean can be produced in Media and Baby sizes.
