SALAME

Genova (a.k.a. Genoa)

Bona Genova Salame consists of coarsely ground pork mixed with black peppercorns and various other spices. The meat mixture is stuffed into artificial casings and dry cured through a process which can take up to 90 days.
The large diameter of Genova Salame makes it ideal for deli counters and high volume applications.
Genova is available in whole, half, and one-third pieces. Whole pieces are available with or without vacuum packaging.
